Holiday Baking with Domino Light Sugar & Stevia Blend

Sweets is definitely my weakness and especially when it comes to the holidays and into the new year my resolution is to make better choices. I have never cared for the taste of artificial sweeteners so finding a sugar that has great taste and is able to be used as a sugar replacement for everyday use in tea and other drinks and also baking that would be awesome. I was excited to learn about Domino Light Sugar and Stevia Blend for holiday goodie baking.

Angel Food Cake

1 1/2 cups – sifted Domino® Confectioners Sugar

1 cup – cake flour

1 1/2 cups – egg whites (10 to 12 large)

1 1/2 teaspoon – cream of tartar

1 teaspoon – vanilla

1/2 cup – Domino Light Sugar & Stevia Blend

Line a 15-in. x 10-in. x 1-in. baking pan with waxed paper. Prepare cake according to package directions.

Pour batter into prepared pan. Bake at 350° for 15-20 minutes or until cake springs back when lightly touched. Cool for 5 minutes.

Turn cake onto a kitchen towel dusted with confectioners’ sugar. Gently peel off waxed paper. Roll up jelly-roll style in the towel, starting with a short side. Cool on a wire rack.

Unroll cake; spread filling evenly over cake to within 1/2 in. of edges. Roll up.

Pink Filling:

3/4 cup heavy whipping cream
1/4 cup milk
1/4 cup confectioners’ sugar
1 egg white, stiffly beaten
1/2 teaspoon vanilla extract
Add 1-2 drops of food coloring.

Mix heavy cream with the milk and beat until stiff. Fold in the sugar, beaten egg white and vanilla. Gently mix until all sugar is mixed thoroughly.

Green Icing:

1 1/2 sticks unsalted butter, softened

1 pound (3 2/3 cups) confectioners’ sugar

1 to 2 tablespoons milk (optional)

Green food coloring

In a mixing bowl, cream butter until smooth.

Gradually add confectioners’ sugar; beat until smooth. If too thick to spread, beat in 1 to 2 tablespoons milk.

Add 1-2 drops of food coloring.

Topping (Optional):

Take 10-20 small candy canes and use a food processor to chop the candy cane to chunks. Remove some of the larger chunks (approx. 1/4 cup or a little more) and then grind the rest to a fine powder.

The family really enjoyed the desert and was not able to tell the difference in taste as if I had used regular sugar. I did notice it was not overly sweet but for me it was great for me because I am not happy about overly sweet deserts I love the understated desserts where it is sweet but not so sweet it over powers you.
